Are you looking for an high quality and artisanal ham? From 9th to 12th of may 2016 we are going to attend Cibus (pavillon 2 stand I072) for the first time we present our ham in a personal stand in cold cuts Cibus area.
We would like to celebrate this way our first 40 years of activity hoping to offer you a new experience in taste with our Parma Ham that bring with him:

Taste is confirmed as an important meeting dedicated to italian food & wine excellences. We are proud to present to Taste Foodies our Parma Ham.
Will be a pleasure for us introduce to you:

  • the passion for our job;
  • the care behind the seasoning of each single pig’s thigs
  • the expectation that leads to the end of Parma Ham seasoning.

We’ll tell you a little of our history of Parma Ham producer, our family and our land, a Reserve of Man and Biosphere by Unesco, and we’ll try to conquer you by a slice of our Parma Ham.
New entry product “Parma Ham Casa Graziano 30 e Lode” , we have restored an ancient basement for its long seasoning; a place with wall stones and woodden scalere where “30 e Lode” matures refreshed by the good air of our mountains.

parma candidata città creativa per la gastronomia unesco

Parma Creative City of Gastronomy UNESCO

Parma is the only italian Creative City of Gastronomy Unesco. Our Ducal city won the competition against Burgos (spain) and Portland (US).
Thanks to food and wine excellences Parma has full rights entered in the Creative City of Gastronomy list by Unesco.
Parma Ham, Parmigiano Reggiano Cheese, Culatello, Wine from Parma Hills are only an example of excellences that express the distinctiveness of our territory. Traditional dishes, unique flavors, great Chefs that reinvent and enrich tradition with new emotions: inestimable assets of our tradition that has given us the opportunity to become a Creative City for Gastronomy Unesco.
Eleven chefs have supported the candidature of Parma in this video.

In these days olso Roma enter in Creative City Unesco List in Film category.

Other italian creative City are: Bologna creative city of Music, Creative City of Craft and Folk Arts and Torino Creative City of Design. Creative contests are seven: Crafts & Folk Art, Design, Film, Gastronomy, Literature, Music and Media Arts.

Other Creative City of Gastronomy are: Östersund (Sweden), Zahlé (Lebanon), Floriabopolis (Brasil), Popayán (Colombia) , Chengdu e Shunde (China), Jeonju (Sud Korea), Tsuruoka (Japan).

GUSTòVAGO | Parma | 2-18 ottobre 2015

Gustovago Saperi e Mangiari: iniziativa che ci ha affascinato sin da subito. Siamo stati invitati a partecipare a questa prima edizione dedicata alla via Emilia e con entusiasmo abbiamo accettato di far parte di questo ambizioso progetto.
Ma cosa significa Gustòvago? L’ideatore del progetto,Francesco Fadda lo definisce così:

“Il Gustòvago è colui che viaggia, che gira, che vaga appunto, spinto dalla curiosità di assaporare ogni sfumatura di un territorio, quello italiano, allo scopo di arricchire il proprio bagaglio di esperienze sensoriali e culturali, nell’affascinante quanto coinvolgente mondo dell’enogastronomia.”

L’evento prevede diversi momenti legati alle eccellenze:
1) Chef stellati che lavoreranno a 4 mani (chef titolare e chef ospite) per deliziare il pubblico con cene eccezionali e uniche;
2) momenti formativi per illustrare le eccellenze della Via Emilia raccontate direttamente da piccoli produttori selezionati;
3) momenti degustativi per scoprire tali eccellenze;
4) momenti di dibattito, presentazione della nuova guida de “l’Espresso”, libri di cucina ed incontri con illustri Chef italiani e Show cooking;
5) Street Food di alto livello.

Speriamo quindi di potervi coinvolgere in diversi momenti che ci vedranno protagonisti: nei piatti ideati dagli Chef stellati ospiti della manifestazione e nelle degustazioni di Prosciutto di Parma.

Venerdì 2 ottobre il nostro prosciutto di Parma sarà protagonista nel piatto realizzato dallo Chef Marcello Trentin del Ristorante ”Magorabin”
“Capasanta, dashi di parmigiano e sabbia di Crudo di Parma” presso il Ristorante Antica Corte Pallavicina dello Chef Massimo Spigaroli.
Mentre Venerdì 16 accompagnerà una preparazione di Daniele Usai del ”Ristorante Il Tino” al ristorante L’inkiostro dove si svolgerà una cena a quattro mani con le Chef Terry Giacomello.

Ci saranno anche dei momenti di degustazione e formativi che si svolgeranno presso il Temporary WorkOut Pasubio in via Palermo, 6:
Sabato 10 ottobre alle ore 19 vi aspettiamo per una Verticale di Prosciutto;
Sabato 17 ottobre alle ore 12.00 per una chiacchierata con degustazione finale per conoscere meglio la nostra azienda e i nostri prodotti e soprattutto per capire come riconoscere un prosciutto di parma di alta qualità.

E se vi viene fame il “panino della Via Emilia” a base di prosciutto è sempre disponibile allo Street Food di Gustòvago!

MILANO GOLOSA 2015 | October 3-4-5 | Palazzo del Ghiaccio

”Milano Golosa” attends us again like exhibitors and craftsmen that trust in the quality. You will find as at stand 25 where you could taste our Parma Ham “Casa Graziano Gran Riserva”, “Casa Graziano 30 e lode” (new product) with a long seasoning in our “Ancient Basement” and “Gran Culatta di Montagna“.
This year in Milano Golosa on talk about “Conscious Shopping” and we are going to take part at the work shop “Salami instructions for use” where we are going to explain how to recognize the quality of a Parma Ham checking on some features and why artisanal products are different and better than others.

Appennino Vista da Lagrimone

Tosco-Emiliano Appennine: MAB Unesco Reserve

Tosco Emiliano Appennine has been recognize as Unesco Man and Biosphere Reserve from June 9, 2015. The International Mab program (Man and the Biospere Reserve) borned in 1970 has insert our Appennine in the list of natural excellences thanks to the wonderful bio-divesity, great panorama and the capacity of the man to preserve the delicate balance between the preservation of the nature and the development of cultural and productive aspects.

Mab Reserve Unesco Area includes 631 sites in the world and 13 of these are italian.

Our Municipality of Tizzano Val Parma and the “100 lakes park” are inside the Biosphere area of Tosco Emiliano Appennine, toghether with other 37 Municipalities located in the Appennine Area from “passo della Cisa” to “passo delle Forbici”.

Also thanks to tipical productions of Parmigiano Reggiano and Prosciutto di Parma our territory has received this important acknowledgement.

In the year dedicated to the EXPO , we attend  TUTTOFOOD | Milano World Food Exhibition for the first time, one of the most important European fair in this sector: you will find us at Pavillon 2 stand F/30.
We are going to present our Top Products:
– Parma Ham  Casa Graziano Casa Graziano Gran Riserva 24 months seasoned ;
– New limited production of Parma Ham 30 months-seasoned: this new deliciousness matures in an old family cellar built in 1954 and recently restored for a new life; we have reinforced the old stonewalls and brought new strength to the old wooden “scalere” that since 1954 hold up the hams allowing their aging.
We have gone further the “usual” time of seasoning to give you the best: a product with an ancient taste that breaths the old-times values and the mountain air.
One more reason to come and visit us to taste in advance this new delicacy.
